Most ‘pectinases’ that are sold are a mixture of several different enzymes. In contrast, NovoShape® is a preparation of a just one enzyme - pectin methylesterase. Pectin methylesterase modifies pectin molecules in a very precise manner, which helps to maintain the shape and texture of fruit pieces in food products.
